Ingredients:
1 lb. sirloin pork cubes
6 carrots (2 cups)
4 red potatoes (2 ½ cups)
1 turnip (1 cup)
1 leek
1 medium onion
2 cloves garlic
1 quart chicken stock
11/2 teaspoon salt
1 teaspoon pepper
1 teaspoon of thyme
2 oz. flour
3 tablespoons canola oil
20 minute prep, 45 minutes to 1 hour cook time. Serves 2-3.
- Salt and pepper pork and coat with flour.
- Brown pork in oil and remove from pan.
- Brown onion and leeks with some salt.
- Add carrots, turnips, and potatoes.
- Add remainder of seasonings.
- Cover with chicken stock.
- Add water as necessary.
- Bring to a boil and then simmer 45 minutes to an hour or until pork is fork tender.
