Dragon’s response to my dutch oven chicken speed meal. Dragon prepares a fast meal for 4 people. This is an easy recipe to learn. She uses a single burner camp stove to prepare this meal. Practice this at home and you will be ready to cook this during your next camping trip.
Ingredients:
14 oz. package of kielbasa sausage
1 1/2 lbs. zucchini
1 lb. Broccoli crowns
2 medium red bell peppers
1 cup rice
4 oz. olive oil
2 cloves of garlic
1 tbsp oregano
1 tbsp granulated garlic powder
1 tsp parsley
Preparation
- Cut & separate broccoli crowns into florets
- Cut unpeeled zucchini into approx. 2 inch X 1/2 inch sticks
- Cut ends of bell peppers & pop out stems. Cut peppers lengthwise. Remove seeds and insides. Slice lengthwise
- Slice kielbasa into approx. 3/8 inch thick
- Crush the garlic cloves, remove paper and mince
Cooking
- Heat a large deep skillet to medium/low heat
- Add above ingredients
- Drizzle olive oil over the ingredients
- Add seasoning
- Stir lightly to coat everything with oil
- Bring temp to medium until the oil begins to "tick"
- Lower temp back to medium/low and cover the skillet
- Cook for approximately 25 minutes or until vegetables are al dente
- Note: broccoli will take longest. Take care not to overcook zucchini
- Stir occasionally
- After 25 minutes, uncover and add rice to center of skillet
- Add 1 1/2 cup of water and fold in the rice
- Recover and cook for approximately 10 minutes or until rice is tender
- Turn off the burner and allow to rest for 6 minutes, with lid on
- Uncover and fluff rice to release steam. This will keep the rice from getting pasty
- Serve
