Dutch Oven Chicken Speed Meal


Dutch Oven Chicken Speed Meal. Dragon challenges me to cook a fast meal for 4 people. This is an easy recipe to learn Dutch Oven cooking techniques. We use a Camp Oven “with legs” at home in the oven. Practice this at home and you will be ready to cook this during your next camping trip.
Ingredients:
4 chicken leg quarters
12 small white potatoes
6 large carrots
1 medium red onion
2 cloves of garlic (minced)
½ teaspoon Salt
½ teaspoon Pepper
½ teaspoon Rosemary
½ teaspoon Thyme
½ teaspoon poultry seasoning
3 tablespoons olive oil
Place trivet into the camp oven. Cut the potatoes in half, cut the carrots into 1 inch pieces, and cut the onion into ¼ inch wedges and place in the oven add the olive oil and seasonings stir to mix well.
Trim all the unwanted or excess fat from the leg quarters. Place the chicken quarters on top the vegetable mixture. Sprinkle the chicken with the poultry seasoning.
Indoor method: Place in a preheated 425 degree oven for 50 minutes. Check the chicken and vegetables for doneness. Then finish under the broiler for an additional ten minutes to brown the chicken. Note: monitor closely while under the broiler. 
Outdoor method: Place 10 coals under camp oven. Place 15 coals onto lid of camp oven. After 30 minutes rotate oven 180 degrees, rotate lid on oven 180 degrees in the opposite direction.
